Chilly Saturdays were just made for baking. This time, a family recipe for blueberry banana muffins. Yum!
What’s great is that these contain more types of fruit than cups of sugar, which makes them totally healthy (*cough cough).

Blueberry Banana Muffins Recipe from my totally wonderful Aunt Judy. Yield 12 muffins
2 extra-ripe peeled bananas
1 c. packed brown sugar
1/2 c. melted butter
1 c. blueberries
1 t. vanilla extract
2 1/4 c. all purpose flour
2 t. baking powder
1/2 t. cinnamon
1/2 t. sea salt
Preheat oven to 350 degrees F. Puree bananas in a blender or food processor. In a medium bowl, combine bananas, eggs, brown sugar, and butter until well blended. Stir in blueberries and vanilla extract. Set aside.
In a large bowl, combine flour, BP, cinnamon, and salt. Stir banana mixture slowly into the flour mixture until it is just moistened. Spoon batter into lined muffin pans and bake for 25 to 30 minutes, until a toothpick inserted into the center comes out clean. Serve warm.
